ohhh my mother.  always finding ways for "family bonding" which means signing us up for 5ks and battling to get my dad and i out of bed to go with her.  we're not morning people.  my mother, however, gets up by 6 every day.  that's crazy.

well saturday my mom signed us up for yet another 5k.  the bunny rock.  basically they give you bunny ears and play 80s music the whole time.  happy easter.  it wouldn't have been so bad if i hadn't had to wake up at 7:30 to get there.

that's a lie, yes it would have.

regardless, i look adorable in bunny ears.  the rest of the weekend was pretty uneventful. i went to brunch sunday with my parents and my mom made me an easter basket.  yes, i'm 28 and still get an easter basket from my momma.  chocolate and starbucks cards, what more could i ask for?

10 Things I Judge You For

there are certain things in this world that i just don't understand.  and i'm not even going to pretend that i'm not a judgmental person.  i absolutely am.  so are you, just admit it.  as i told Sammantha, i don't judge people based on religion or things like that, but yes, i judge people for being ginger (ahem, Tara), chewing with their mouth open, etc etc.  here's my list of things i will just never understand.  what's on your list?

and if you're guilty of something on this list, I'm no-so-silently judging you.

watching girls (the show.)  i did, in fact, watch all the episodes - it's only 20 - but i don't get it.  i'm sorry.  maybe that's more of a judgment on me, i just can't understand what all the fuss is about.  hannah is annoying, marnie is pathetic, jessa is crazy, and shoshanna is the only one i like and she's nuts too.  give me my satc any day.

making pinterest boards of weddings and babies when you're single.  slow down.  there will be plenty of time for that.  

poor grammar.  and spelling.  obviously not on a blog, but in real life.  if you're writing something like, oh i don't know, legal documents, i expect you know know the difference between your and you're and there and their.  it's actually not complicated.  and judgment does not have an e in the middle for the love of god.

shopping at american apparel for more than costumes or leggings.  i'm sorry, their clothes are skanky and weird and their display windows scare me. (note my correct use of "their")

eating mayonnaise.  just, yuck.

owning more than one cat as a single girl.  really, look who's talking, right?  i should embrace this one but i admit i still feel judge-y about single girls with lots of cats.  lots of dogs though, totally legit.

celebrity baby names.  apple is a fruit.  rainbow is a meteorological phenomenon.  denim is a fabric.  pilot is a career.  banjo is an instrument.  seven is a number.  none of the above are acceptable names for a human child, and you being famous doesn't change that fact.

owning crocs.  that shouldn't surprise you.

hashtagging on things that are not twitter.  Tara and i do this all. the. time. we hashtag text messages like it's our job.  i've probably used one on this blog.  i judge myself for it, because it's completely illogical.

ordering ridiculously complicated starbucks drinks.  if it takes you longer to order it than it takes for them to make it, i hate you.  it's coffee.  if you don't like the taste of coffee, stop ordering coffee.

Irish Car Bomb Cupcakes

is there anything happier than st. patrick's day in chicago?!  i'm pumped for this weekend and in anticipation thereof, i made my famous irish car bomb cupcakes.  i made them last year, and everyone loved them and also got tipsy off them so i think they're a win.  you can go the difficult route, which i laid out for you.  it will leave you with more authentic slightly better tasting cupcakes, like the ones i made last year.  and then i also, in bold, laid out the easy, cheater route, which is what i did this year.  trust me folks, if you're pressed for time and no one is an expert cupcake judger, go the easy route.  no one will know.

the cakes
simmer 1 cup guinness with 1 cup butter and whisk in 3/4 cup cocoa powder until smooth.  allow to cool slightly.  in a bowl, beat 2 eggs and 2/3 cup sour cream until combined.  add guinness mixture and combine.  in another bowl, combine 2 cups flour, 2 cups sugar, 1.5 teaspoons baking soda, and 3/4 teaspoon salt.  add to egg mixture slowly and combine completely.  put batter in cupcake tins and bake at 350 degrees about 15 minutes.

easy cheater route - mix chocolate boxed cake mix (just the dry mix!) with 1.5 cups guinness.  fill tins and bake as directed.  you're welcome.  because don't even act like you aren't thrilled i tested that one for you.

the filling
simmer 2/3 cup heavy cream and pour over a bowl of 8 ounces chopped bittersweet chocolate.  allow to sit for 1 minute and then stir until smooth.  let rest for 2 minutes.  stir in 2 room temperature tablespoons butter and 2+ teaspoons jameson.  allow to cool until think enough to be inserted into the cupcakes without melting out.  cut out the center of the cupcakes and fill with your whiskey creation.

easy cheater route - 12 ounces (1 bag) semi-sweet chocolate chips, 1 cup heavy whipping cream, 3 tablespoons jameson.  microwave chocolate and cream 1 minute at at time, stirring in between, until melted.  add jameson.  less ingredients, less measuring, more alcohol.  you're welcome.  (in case you're wondering, butter makes ganache glossy and pretty.  in the middle of a cupcake, who cares.) 

the frosting
beat 1 stick room temperature unsalted butter until fluffy.  slowly add in 3 cups powdered sugar.  then add in 6 tablespoons bailey's and beat until fluffy.  no easier route than that!

frost when cupcakes are completely cool, sprinkle in green, and enjoy!  happy St. Patrick's Day!

Disney Wedding

finally recovering from my extended weekend, and getting back into the swing of work and being home and accomplishing real life tasks without the planning process of race day/wedding weekend hanging over me.  seriously though, can you believe my weekend?  spent all day drinking and racing for the chiditarod and then hopped a plane to florida for 24 hours to see Haley get married.  you may remember her vegas bachelorette party.

since this entire week of blogging has been one long weekend recap, i might as well keep it going, right?  so here's Haley and Paul (and guests) and all their disney wedding glory.

and then i did this.

oh does that injury look familiar to you?  perhaps that's because i did the exact. same. thing. to my other ankle in january.  which is still hurting and slightly swollen.  fail.  as Tara says, i now have matching cankles.  so i was limping around the airport all pathetic like, making Jeff get me cups of ice from Qdoba to bring the swelling down.  in fact, the guy checking my id and boarding pass said, in response to my 'how are you', "less exhausted than you.  you look like you ran a marathon to get here."  thanks for confirming that i look as bad as i feel, mr. tsa man.  

i need a vacation from my vacation.

Team Spice Attack

Team Spice Attack rocked it out this weekend -  me, as Baby.  Tara as Ginger.  Kiernan as Scary.  Jeff as Posh.  Bill as Sporty.  do Tara and i have the best guy friends or what?  little black dress, leopard pants, wigs.  amazing.  we're already planning a halloween group costume involving Jeff as Daisy Duke.

this was all for the yearly Chiditarod.  you get a team of 5 together, commandeer a shopping cart, and go to town with the decorations and theme.  (spice world, obviously.)  you raise donations and non-perishable food items to be donated to a Chicago food bank.  then comes race day.  150 teams race their shopping carts through the streets of Chicago, from bar to bar, for a total of between 4 and 5 miles.  you can compete to win fastest time of course, or you can be like Team Spice Attack and attempt to get the coveted DFL trophy (Dead Fucking Last.)  you must stay at each bar, or checkpoint, for 25 minutes.  each bar has different competitions to join in on, like twister, bozo buckets, sumo wrestling, karaoke, sword fighting.  you can win all kinds of prizes for those too, as well as Best Sabotage, like removing the wheel of someone's cart, Best Team Spirit, Most Food Donated, Best Tweets, etc, etc.

and well, i'll just let the photos speak for themselves.  go check it out.  now that you know what it is.  and also check out the recipe for the gin and tonic mini cupcakes we made.  huge hit!!

i'm still recovering from racing the 7.5 miles that was the chiditarod and then going to florida the next morning.  so i apologize for the lack of words in my posts, but i think i more than make up for it with the photos.  kiernan is in leopard print pants.

Gin and Tonic Mini Cupcakes

what??  we decided gin is totally british and the spice girls probably drank tons of gin.  and we couldn't show up to a bar crawl without some cocktail cupcakes, right?

so 5 ingredient mini cupcakes were born!  yeah you read that right.  5.

remember how i told you cake mix + champagne = cupcakes?  well, really, cake mix + any fizzy drink is going to make cupcakes.

the cakes
white cake mix from a box + diet sprite.  cause these are low cal of course.  honestly, diet sprite is what i had and i wasn't about to run to the store for some tonic water.  it still counts.

the glaze
to really get a good gin and tonic taste, while the cupcakes are cooling poke a few holes into the tops.  mix 1 cup powdered sugar with 3 tablespoons gin and a touch of lime juice. (i suppose the lime juice makes it 6 ingredients, but i didn't use the lime juice because i don't like it.  tastes more like the drink if you do though.)  stir until it makes a glaze, like thin icing.  brush or pour over your mini cakes.

the frosting
when the cakes are completely cool, beat 1 stick softened unsalted butter and slowly add in 3.5 cups powdered sugar.  slowly mix in 3 to 4 tablespoons gin, until the frosting is the consistency you like.  more gin = thinner frosting.

frost and enjoy!  you could also do some lime zest on top but, again, i don't like lime and we did mini british flags instead.  really drive that theme home.
