Three on Thursday

ONE.

Project 3000.  If you follow me on Instagram, you've probably seen some of my stories updating when I declutter things with the hashtag #Project3000.  You can catch up on the 'declutter' highlight on my profile if you missed it.  It was started by blogger and professional organizer, Claire, who is just adorable on Instagram so you should follow her if you don't.  It's been reported that the average home has 300,000 items in it.  Isn't that wild?  That's a whole lot of crap.  So she started the idea to get rid of 3,000 items from her home, as a fraction of that 300,000 estimation.  Obviously it's just another way to declutter and make a game out of it, by being able to track all the things leaving your home, but it's a lot of fun and I love seeing everyone else's declutter piles under that hashtag.  I know I don't have 3,000 items, period... but John does...


TWO.

Heated Blanket.  It's warming up now, but we had a couple polar vortex days.  The heat will only go so high when that happens, so we loved that we had this heated blanket.  It's not something we think about or pull out regularly but when you need it, it's amazing.  Heats up super quickly and feels so cozy.  These used to be dangerous when they first came out I think, but they're super safe now (in case that was your concern), and yes, you can wash them in the washing machine, I've done it.


THREE.

Vegan Mac and Cheese.  Rarely, rarely, do I think that vegan tastes anything like cheese.  I never buy the fake cheese in the store, and I almost never make recipes that promise to taste like the real thing, like 'vegan nachos', because I'm always disappointed.  And they're always really hard recipes, to be honest, and I just don't have that kind of time or desire.  Until Caitlin posted vegan mac and cheese.  I've talked about Caitlin before as a vegan YouTuber I love, because I find her recipes to be really easy to follow without needing a ton of random ingredients or gadgets, and they always end up looking and tasting exactly how she says they will.  So my mom and I gave her mac and cheese a try and it's fantastic.  Even my dad, head meat and cheese eater of the house, loved it, so that's saying something.  It's creamy and delicious and gloriously garlicy (I freaking love garlic), with shockingly few ingredients that are all healthy.  Yes.  Healthy.  Especially if you get a healthier bean based pasta.  I could eat this every day.  I will say that we found this recipe made a lot, and that leftovers didn't heat up as well, they lost the creaminess.  But to make and consume right away, it's vegan sorcery I tell you.  So good.
