Three on Thursday

ONE.

Pineapple Bourbon Lemonade.  This weekend is the Kentucky Derby!  One of my favorite days of the year.  This is also the weekend that John's brother is getting married but I really will have to leave whatever part of the reception we're in at that moment to watch the race.  No shame.  Anyway, in honor of Derby Day, I have some related favorites to share, starting with this pineapple bourbon lemonade.  I love bourbon but I hate the traditional Derby drink, the Mint Julep, because I don't like mint in my drinks.  I much prefer the taste of bourbon with pineapple!  And with the fresh lemon juice in the recipe, it really cuts the sweetness.

TWO.

Kentucky Bourbon Balls.  Another Derby classic, and these are no bake!  Who can argue with no bake desserts?  It's especially perfect for recipes that have alcohol, since baking would cook out all the booze.  These have a nice bourbon taste and are so simple to make.  Obviously we're busy this weekend but we plan on hosting a Derby party starting next year.  And these will always be on the menu.

THREE.

Kentucky Derby Pick.  I usually feel strongly about one horse in particular, but I don't this year.  My top two are Tacitus and Long Range Toddy, and if I had to pick just one to bet on to win, it would be Long Range Toddy.  Which horse is your pick?
