Simple Peanut Butter Blossoms

I know these are traditionally considered Christmas cookies and it's only April but you know what, these are good any time of year and they happen to be John's favorite. Which means they're comforting to him. In case you also need some comfort cookies in the next 30 days (or longer if we don't behave) while you're inside your home, here's how to make super simple peanut butter blossoms.

Ingredients


  • 1 and 3/4 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 4 oz (1 stick) butter at room temperature
  • 1/2 cup smooth peanut butter
  • 1/2 cup granulated sugar, plus a bit extra for rolling the cookie balls in later
  • 1/2 cup light brown sugar
  • 1 large egg
  • 1 tbsp milk
  • 1 tsp vanilla extract
  • 2-3 dozen Hershey Kisses

Steps


  1. Sift together the flour, baking soda, and salt and set aside.
  2. Cream together the butter, peanut butter, and both sugars with a mixer, in a bowl you can add a lid to later.
  3. Once those are well incorporated, add in the egg, milk, and vanilla extract and mix again.
  4. Gradually add in the sifted flour mixture.  It takes me 3 or 4 small batches to get it all added in.
  5. Cover the cookie dough with an air tight lid and refrigerate for 20 minutes to 1 hour.
  6. Unwrap all the Hershey Kisses.
  7. Line your cookie sheet.
  8. Bring the dough out of the fridge and begin rolling into balls.  Mine are about 1 inch, you can go a little smaller for smaller cookies or larger for larger cookies.
  9. Roll each ball in the extra granulated sugar and place on the baking sheet.  With this size and this amount of dough, I get 24 cookies.
  10. Place dough balls into a 375 degree oven for 6 to 8 minutes.  Because of the size, mine were about 8 minutes.
  11. Take them out and while they are still hot, place one Hershey kiss into the center of each cookie and push down lightly.
  12. Return the cookies to the oven for an additional 2-3 minutes.  It will finish cooking the cookies but won't melt the chocolate.

And that's it!  You have delicious peanut butter chocolate kiss cookies.  These are always crowd pleasers, and so easy to make.
